Wuyi is famous for its fantastic landscapes, and the rock tea produced in the mountains is one of the most unique teas in the world. Today I would like to share with you the third rock tea of 2020, Huang Guan Yin, cultivar code number 105. Huang Guan Yin is an oolong tea variety officially certified by the Chinese government. It was developed by the Tea Research Institute of Fujian Academy of Agricultural Sciences from 1977 to 1997 with Tie Guan Yin as the mother plant and Huang Dan as the father plant. Then among their offspring the best single bush was selected. Huang Guan Yin is a kind of early maturing variety Wuyi rock tea with high aroma. Its aroma is said to "pierce the heavens" (toutianxiang). The dry tea leaves are tight, brown, yellow and green, with light orchid fragrance, and bright, orange-yellow soup. It "heaven-piercing aroma" is akin to golden osmanthus flowers. The fragrance left under the lid of a gaiwan and at the bottom of a cup are very pleasant, light and long lasting. The aroma fills the lips and teeth in the mouth, just like the orchid blossoming quietly, the delicate fragrance reverberates between the tongue and teeth, and the "returning sweetness" (huigan) in the throat is very good. Huang Guan Yin that I recommend to all my tea friends today was bred in good mountain environment, processed with superior craftsmanship, lightly baked over charcoal, has strong flower and fruit fragrance. It is perfect for rock tea beginners. It has strong aroma of flowers, such as magnolia or gardenia. It is suitable for brewing in a gaiwan or purple clay (Yixing). I recommend to brew it with 100°C water. I usually set the amount of tea to be about 8.3 grams per each small bag. It should be noted that Huang Guang Yin, as a kind of highly fragrant tea, should not be infused for a long time, or allowed to sit in the cup for too long. Otherwise it can easily turn bitter and astringent. Therefore, it is advisable to pour water in and out quickly when brewing.
